Chocolate Pumpkin Protein Cake made with the RTN Vanilla Whey

Ingredients: - 1/2 cup steel cut oats
- 1 cup of RTN Vanilla Whey
- 1 1/2tbs pumpkin pie spice
- 1tsp baking powder - 1 1/4 cup of pumpkin pie purée (not pie filling)
- 1/2 cup of plain non fat Greek yogurt
- 1 egg
- 4 egg whites - 2tsp vanilla extract - 1 tsp liquid stevia or 3 packets of organic stevia
- 1/2 cup of chopped walnuts
- 1/2 cup sugar free chocolate chips

Directions:
1. Spray 8" pan with olive oil or coconut oil spray, set oven to 300 degrees
2. Blend oats in a food processor until they become a powder
3. Combined all other ingredients besides chocolate chips and walnuts
4. Stir in walnuts
5. Bake on 300 for 30 min or until toothpick comes out clean.
6. Melt down chocolate chips on low heat stirring constantly. Then drizzle on top of protein cake. Garnish with almonds or walnuts
